We organized a seated dinner for 400 people at the venue Vollgutlager for the London-based media group Citywire. For starters, we served: fried cod with sesame potato cream, candied fennel, wild herb salad, and apple curry as well as a vegan version with roasted king oyster mushrooms. The main course impressed as we rolled out Black Angus Beef Tournedos with brioche mushroom crust, broccoli, sweet potato puree, and truffle jus –for the meatless version: a vegan flank steak alternative, optionally with a delicious lentil and nut bread.
